Ingredients:
300g Milk (almond milk option)
200g all-purpose flour or gluten-free 1:1 baking flour
200g Eggs
120g golden yellow sugar (Other options: coconut sugar or sweetener)
100g Butter (Other options: coconut oil, or cold-pressed oil)
15g Freeze-dried raspberry
15g Baking powder
1/2 tablespoon Vanilla extract
🍳 Step-by-Step Preparation
1.- Mix the Base
In a large bowl, Mix the sugar (or sweetener) with the butter until creamy. Add the eggs one by one, mixing well each time.
2.- Add the Dry Ingredients
In another bowl, mix the flour, baking powder, and a pinch of salt. Add this dry mixture little by little to the wet mixture, alternating with the plant-based milk. Don't overmix: just enough to combine.
3.- Add the Freeze-Dried Fruit
Add the freeze-dried fruit, either in pieces or powder, to add color, flavor, and extra nutrients to your muffins.
4.- Bake
Pour the batter into pre-greased muffin tins or paper liners. Bake at 175°C for about 30 minutes, until a toothpick inserted comes out clean.
5.- Enjoy
