Banana Bread

Banana bread is one of those comforting homemade classics: aromatic, tender, nutritious, and perfect for any time of day.

Ingredient:

250g Milk (almond milk option) 

200g All-purpose flour or gluten-free 1:1 baking flour

100g Almond flour

250g Eggs

90g Golden yellow sugar (Other Options:coconut sugar or sweetener)

90g Butter (Other Options: coconut oil, or cold-pressed oil)

15g Freeze-dried banana powder 

15g Freeze dried banana

15g Baking powder 

1/2 Tablespoon Vanilla extract 

100g Dark chocolate chips 70.5%


Prepare:

1.- Preheat the oven to 350°F (175°C) and prepare a banana bread pan by lining it with wax paper or greasing it well.

2.- In a large bowl, add the eggs, butter or oil, sugar, and vanilla. Mix well until everything is combined.

3.- In another bowl, mix the flour (gluten-free), almond flour, freeze-dried banana powder, and baking powder.

4.- Add the dry ingredients to the wet mixture little by little, alternating with the milk, mixing gently, until a smooth batter forms.

5.- Add the freeze-dried banana pieces and chocolate chips, and mix lightly.

6.-Pour the batter into the prepared pan and smooth the surface.

7.- Bake for about 50-60 minutes, or until a toothpick inserted into the pan comes out clean.

8.- Let cool in the pan for about 10 minutes, then remove from the pan and let cool completely on a wire rack before cutting.


Tips & Variations

  • Add toasted nuts or dried fruit for added texture.
  • Store in an airtight container at room temperature, or refrigerate if using ingredients that require chilling.
